he dishes offered at Metro Bis are a creative blend of spices, herbs, and flavors served in a comfortable bistro atmosphere. The menus change seasonally and are inspired by the full range of cuisines featured within the American culture. Items such as house smoked salmon, spring rolls, and cavatelli compliment and contrast each other and please each palate.


hen chef Chris Prosperi and his wife, Courtney Febbroriello, stepped into Metro Bis restaurant during a bustling afternoon in 1998 they knew instantly that they would soon own the charming bistro. The Paris metro train doors that grace the front of the restaurant and the lights from a metro station dangling delicately from the ceiling caught their imaginations. Courtney's French was quite rusty but she soon learned that Bis meant again or encore. Together they longed to recreate a European style of service with a rangy American menu to delight guests. The cozy, sixty-four seat space in the heart of Simsbury, Connecticut just west of Hartford became the perfect backdrop to Chris' creative culinary expression and the "bistro that makes you want to shout encore" was born.
