Cuvee Dom Perignon is made only in exceptional vintage years, from the finest grapes Champagne vineyards can provide. Under the guidance of the Chef de Cave Dominque Foulon, Moet & Chandon's team work to marry and balance the different wines. Throughout the long process of tasting the individual wines, they assess their ability to develop and harmonize when blended. They seek a subtle marriage between Chardonnay's floral and fruity characteristics and the breeding and roundness of Pinot Noir. Once blended, Cuvee Don Perignon is given a long period of aging in our chalk cellars. As the wine matures, it acquires the complexity, body and finesse for which is renowned.
