This 7 to 9 lb. chocolate cake has a layer of white, milk, bittersweet and raspberry chocolate ganach sandwiched between 4 layers of chocolate genoise then frosted with a dark chocolate frosting. Serves 16-20. 

Chef Joe DePatty is a graduate of the world famous Culinary Institute of America.  Before coming to CT he worked in Hollywood with chefs like Wolfgang Puck at Spago and Michel Richard at Citrus.  Here in CT he has worked in some of the top French restaurants, has cooked for and with Julia Child and was pastry chef for Max Downtown.
