Description
One Bottle of 2003 Chalk Hill Cabernet Sauvignon. Well drained rock-strewn soils underlie the hillside vineyard blocks where Chalk Hill grows their Cabernet Sauvignon. Rigorous and labor intensive processes of leaf and cluster thinning by hand, stimulate color and phenolic ripening. The extracted layers of flavor, concentrated texture and nuance, found their way to barrel... and into the bottle. Additional estate-grown Bordeaux varietals frame and enhance the Cabernet. The wine boasts perfumed aromas of black currants and blackberry jam, with hints of lavender, mocha and star anise. The rich and expansive texture, bolstered by the ripe, velvety tannins, creates a lush mouthfeel and indicates cellar worthiness. One Bottle of 2004 Chalk Hill Chardonnay. Twenty-six different plantings-a result of pioneering and ongoing clonal research program-provided Chalk Hill with different lots, all building blocks that add to the sum. The entire vintage was allowed to progress in barrel through fermentations that imparted layers and complexity. Aged in French oak for 14 months, it was then gently bottled. Neither fined nor filtered, the wine boast intense aromas of Asian pear, green apple, toasted hazelnut and integrated oak. Chalk Hill's signature combination of richness and elegance is evidenced by the creamy, crisp flavors of lemon pie, and exotic spice, all buoyed by the bright, fresh acidity.
