FourWinds Steakhouse, Wills Point (Outside Dallas) 

Out in a stretch of hay prairie lies this sprawling comfortably rustic ranch house formerly owned by a Dallas middle linebacker, Lee Roy Jordan, and conspicuously paneled in cedar planks from his Dallas lumber company. It has a twisty driveway flanked in wood fencing. It has a pond stocked with bass and catfish the size of Mike Tyson mitts. It has a gazebo. Steaks are outlandishly delicious--non-prime things cleaved to order from a fresh loin. Scallops and crab cakes are tasty too. But the most noteworthy non-steak attraction is the house-made mozzarella, as chewy as taffy, as soft as fish and as tasty as steak juice. You know a steak house serving delicious non-prime steaks and house-made mozzarella has something on the ball.
