The focus of Essen's classes is on preparing "everyday food" incorporating fresh, not-processed ingredients. Preference is given to locally-grown and -sourced produce, meats, dairy and other foodstuff.

Essen Classes are menu-based and technique-driven. What that means is participants will learn a complete meal to prepare for friends and families at home. Recipes are chosen for their value as part of a whole as well as their ability to stand alone or paired with your personal favorites. However, it is the focus on basic, solid cooking techniques that will ultimately give you the freedom to cook with the freshest ingredients the day you're at the market.
