In addition to Fair Trade and organic coffees, Ginkgo strives to serve food made with locally grown organic produce.  During growing season, our sandwiches sport a wide variety of locally grown produce such as tomatoes, lettuce, cucumbers, and onions.  Our soups are often made with locally grown squash, zucchini, onions and cauliflower, to name a few.
