Vinification:
The grapes are handpicked in November and dried naturally. Traditional submerged head fermentation followed by 2 year aging in oak casks. This Barbera undergoes no clarification or filtration and no type of chemical or physical stabilizing process.
Tasting Notes:
Dark ruby red with scarlet highlights. Vinous, fragrant nose with plum, violet and spice undertones. Dry, full-bodied flavor, with a hint of tannins and a long, elegant finish. Serve with roast meat, strong cheeses, red and boiled meats, and game.
