Description

One lucky bidder will receive two Chalk Hill Estate magnums signed by renowned winemaker Jordan Fiorentini. A 2003 Chalk Hill Estate Cabernet Sauvignon given 94 points by Wine enthusiast and a 2006 Chalk Hill Estate bottled Chardonnay rated 90 by Wine Advocate.

ALL WINES AT CHALK HILL ARE ESTATE BOTTLED, but their philosophy goes beyond the conventional definition. Each of their 60 vineyard blocks are tended throughout the year individually. The grapes are then hand harvested, parcel by parcel and fermented in small, distinct lots. This meticulous handling of the vines, grapes and finished wine allows the ultimate expression of Chalk Hill's many and varied terroirs.

CHALK HILL'S POTENTIAL FOR GREAT CHARDONNAY was discovered early and it became one of the initial plantings. The oldest, Founder's Block dates back to the establishment of the winery, in 1972, and remains a keystone in the estate's Chardonnay program.

In order to draw out its true varietal character, and imprint the Chalk Hill Estate signature, the winemaking regime always includes: whole cluster pressing, natural yeast and malolactic fermentations in barrel, sur lie aging (with batonage) in French oak, and unfiltered bottling- tried-and-true Burgundian techniques.

Each year the muscular strength of the Cabernet Sauvignon is tamed, initially, by careful site selection. Hillside sites, with rocky, well-drained soils lead to lower crop levels, concentrated flavors, and softer tannins. Then, careful crop maintenance including: Vertical Shoot Positioning (VSP), cluster thinning, and selective leaf pulling, all combine to balance the vines for the production of completely mature fruit with great, deep color.

Each year, the Cabernet is blended with a limited component of complementary Bordeaux varieties to add depth and breadth of flavors.
