This restaurant, replacing what was Lotus in the meatpacking district this summer, will have Franklin Becker, last seen performing CPR on the restaurant Sheridan Square, in the kitchen preparing American fare. The place is named for the grandfathers of two partners, Michael Hirtenstein and Mark Birnbaum. A downstairs lounge is named Simyone for the grandfather of the third, Eugene Remm.
