“Drunken” Scallops
Makes 4 Servings

Ingredients
1 ½ lbs. Sea Scallops
1 Pint C&C Seafood Stuffing or Seasoned Breadcrumbs
4 tablespoons Garlic Butter (Recipe Below)
¾ Cup Thinly Sliced Scallions
1 Cup Vermouth
Salt & Pepper 

Instructions:
Pre-heat oven to 350°
Place scallops in an oven-safe baking dish, pour vermouth in with scallops, salt & pepper liberally, and cover surface of scallops with seafood stuffing. 

Place scallops in oven, bake for 20 minutes or until scallops are tender. Place thin slices of garlic butter over top of breadcrumb, and bake for 1-2 minutes. Remove from oven, sprinkle sliced scallions over entire dish, and enjoy!

 Garlic Butter
Soften 4 tablespoons of butter, add 2 teaspoons of minced garlic, and a dash of pepper. Fold ingredients together, and place in refrigerator to re-harden.
