The Renaissance-influenced menu at Sfoglia in Nantucket changes bi-monthly, and is designed to encourage people to dine in the European-style - sampling an antipasto, a primo of Ron's renowned pasta - in fact, the restaurant's name, Sfoglia, refers to an uncut sheet of pasta. In addition, guests at Sfoglia on Nantucket will enjoy a secondo of local island fish, a contorno made with the produce from one of Nantucket's farms, and a dolce from Colleen's menu of deliziosi desserts.

At the more-recently opened New York City location, the menu also changes bi-monthly - inspired by the seasonally available produce from the Greenmarket network. As Sfoglia has done for the past six years on Nantucket, they encourage diners to eat all'Italiana sampling an antipasto, a primo plate of Ron's renowned pasta, a secondo of naturally-raised meats, or Long Island fish, a contorno made with ingredients from area farms, and a dolce from Colleen's menu of deliziosi desserts. The unfussy, casual elegance of Sfoglia's interior, at its New York City trattoria, with its mismatched antique tables, pistachio-colored marble bar, and pink-bronze Murano-style chandeliers, puts the diners at ease.
