Bleu Mont Dairy is part of a farm committed to sustainable agriculture and renewable energy. The farm sits atop a ridge near Blue Mounds State Park in the picturesque driftless region of southern Wisconsin. Even from a distance, the main power source -- a 10kw wind generator -- can be spotted above the treetops. A long driveway leads past a field of rotational organic gardens up to the passive solar home, straw bale greenhouse and cave, and orchard.

Willi Lehner learned his craft from his father, who mastered the art of cheesemaking in Switzerland.
Willi is adding to his Swiss repertoire with original cheeses he creates using his cheesemaking expertise and the controlled environment of his straw bale aging cave.
His artisan cheeses are made with milk from certified organic and rotationally grazed cows. These practices give the milk more taste of the land they come from, and allow him to develop the unique characters of his cheeses.
