2005 Merlot, 2005 Cabernet Sauvignon and 2006 Cabernet Franc from the Spring Mountain District.

High above the Napa Valley floor, Guilliams grapes absorb a more intense sunlight but generally stay cooler than those that grow below.  One result is smaller berries that tend to have thicker skins; another is delicious, balanced wines that combine ripe fruit with lively acidity.

Opened early in the course of a great meal, Guilliams rewards patience and attention.  One sip might suggest ripe dark berries while the next evoke memories of mocha. However you might describe the myriad flavors that come out of these bottles a common theme of elegance and
complexity is never far behind.  

The majority of production goes into the Cabernet Sauvignon, but all wines are a blend of the classic Bordeaux varieties, Cabernet Sauvignon, Cabernet Franc, and Merlot.  The winemakers believe that blends are more complex, more interesting and more fun than single varietals. Each vintage is an expression of place.  The Guilliams choose not to expand production by purchasing fruit.  If they can not grow it, it will never be called Guilliams.
