Chef Peter Merriman has been as a culinary pioneer in Hawaii for over 30 years. Known as the original “locavore,” Peter is a vocal champion of Hawaii’s farmers, ranchers and fishermen. His restaurants showcase island grown and harvested foods through simple preparations that reflect the myriad flavors of Hawaii’s multiculturalism. Dubbed the “Pied Piper of Hawaii Regional Cuisine” by The Los Angeles Times, he is a continuing inspiration to Hawaii’s thriving culinary scene.

Merriman’s in Waimea, which opened in 1988, was Chef Peter’s first after having cooked at resorts across the country and Europe and then here at the Mauna Lani Bay Hotel. Since the earliest days of his career, he has been dedicated to utilizing local ingredients and was one of the founding chefs of Hawaii Regional Cuisine, a movement that has shaped the Islands’ culinary scene.
All of Peter Merriman’s restaurants share a common mission statement: “Do the Right Thing!”
“We always try to do the right thing,” Merriman said of his three decades serving food in Waimea. “That’s our motto, do the right thing. We go out and we buy locally produced food, which is good not only for the farmers and the ranchers and the entire community, but it’s good for the diners. And we have a wonderful group of people that work with us that are waiters and they continue to always just pursue the simple common good things and just demonstrate the Aloha spirit throughout.”
“Sometimes I think I’m the luckiest guy on Earth,” Merriman said, reflecting on his valued relationship with local farmers and ranchers. “I’ve never met a farmer I didn’t like.”
