Description

Carol Ignacio actually answers to several names:  "Vovo" which is Portuguese for Gramma, and "Mimi," which is what her moopuna (grandkids) call her.  And through the years she also has worn many hats!  She literally started The Hawaii Island Food Basket years ago out of the trunk of her car when working as the Statewide Director of Social Ministries for the Catholic Diocese of Hawaii...and she has been involved in starting and growing many significant social services and health-wellness programs here on Hawaii Island that have helped ever so many.  Most recently, this included helping Hawai'i Island become the First County in America to be Blue Zones Certified!  And she continues to serve on the board of Hope Services.  


 


Carol is also a fabulous cook with a very proud Portuguese heritage, and a Portuguese husband too - who is extremely well known in Honokaa as simply, Sheriff Larry.  (No, he's not the Sheriff but a retired Fireman, EMT and Catholic Church Deacon - with a very funny sense of humor!) 


Enriching Carol's culinary expertise is having grown up on the Hamakua Coast so she is intimately familiar with the ethnic diversity of the district...and the foods each of the groups hold dear...and many of these are featured from time to time on Gramma's Kitchen's menu.    


So...when son Chris needed a health break from his popular Gramma's Kitchen restaurant in historic Honoka'a town about 2 years ago, in stepped Carol and Sheriff Larry...and then the pandemic hit. 


The restaurant is surviving.  It's all to-go now, though they have opened a small lounge with very spread-out seating for guests to come in with their to-go meals to enjoy the ono food among friends - albeit distanced.   


So...here's what this gift certificate entails:  Lunch pre-arranged with Gramma (Auntie Carol) at Gramma's Kitchen...or it could be an early dinner - on a Saturday that works for both the certificate holder and Carol.  


And...here's the meal plan:  Portuguese favorites prepared specially for a party of 4 adults and Carol will join you! 


Come prepared to feast - and laugh!    


Appetizer:  Peixinhos da horta


Peixinhos da horta is a Portuguese dish consisting of green beans that are dusted in flour, then fried. The name means fish from the garden because it resembles small fried fish. Traditionally prepared with green beans, some might use red peppers or sweet potatoes instead.


Interestingly, peixinhos da horta was introduced to Japan in the 16th century, and over time it evolved into one of the Japanese staples – the popular tempura!


Salad:  Bacalhau


Bacalhau is salt cod, which is very popular in the Azores and Portugal. It is a salad of shredded bacalhau, sweet onions, tender Hamakua tomatoes, olive oil, and parsley with a hint of vinegar.  


Soup:  Portuguese Bean Soup served with bread rolls


Guests who come to Gramma’s tell us this soup, made with hearty beans, potatoes, and rich broth is the best they ever tasted.


Main Course:  Vinha D’alhos Pork and Chicken


Vinha D’Alhos (vee-nah dosh) is a Portuguese dish that is commonly served during the holidays but very popular every day at Gramma’s Kitchen. Similar to adobo, Vinha D’Alhos is pork marinated in vinegar and spices.  It will be served with roasted potatoes with fresh parsley. 


For those who prefer poultry, we’ll also serve Vinha D’Alhos Chicken.


Dessert:  Pastéis de Nata ~ Portuguese Custard Tarts


Pastel de nata is a Portuguese egg custard tart pastry dusted with cinnamon.  These Portuguese custard tarts are dangerously delicious. You might think that one would be enough, but only if you’ve never tried one because there’s something addictive about the combo of blistered, caramelized custard and flaky golden brown puff pastry.


NOTE:  Pendamic guidelines will apply:  Guests must attest to being fully vaccinated or have a negative Covid test within the past 72 hours and masks will be worn when not eating.
