This wheel of cheese is a Brie Nuit. In the process of making, it was treated with activated charcoal to reduce the acidity and create a different environment for the cultures. It is also made with cracked peppercorns, which bring out a nice bite! The cheese has a stronger flavor than most brie that you can find at a store in America and is much closer to the traditional Brie de Meaux of the Brie region of France. It will have a tangy, strong flavor if opened immediately. You can leave it unopened in the refrigerator for up to four more weeks and the flavor will mellow substantially. This cheese would be best enjoyed with a crisp, fruity wine (like a riesling or chenin blanc) or low acid fruits.
