The Ceremony of Making Coffee is not merely a way extending friendship and giving refreshment to a weary, but is is a deeper sense of physical statement of the obligation a host incures in welcoming a visitor into ones home. Traditionally, one drinks three cups of coffee: The first is tasted by the Bedouin to make the guest feel safe. The second is poured and tasted by the guest himself. The third is also drunk by the guest who then shakes out his cup and hands it back to his host. Once the coffee is drunk he is under the protection of the host.
